A Warm Bacon Jalapeno Corn Dip that’s packed with flavor that will make you forget about the chips and grab a spoon!

I am so thrilled to bring you my first bacon recipe in this months #putsomepiginit party for #baconmonth! That hashtag though, gets me laughing every time! As I’m going into this month, I have two things on my mind… bacon and football. I am so ready for football season to get here that I just couldn’t wait any longer to start creating new tailgating dishes… this party gave me the perfect opportunity! 

Everything about this dip to me screams fresh. I used fresh sweet corn (that I went and stole from the neighbors patch because they’re awesome!), fresh bell peppers, fresh jalapenos, fresh onions, and the bacon.. not even store bought bacon! Pretty sweet right? I think so. It’s always nice when you can utilize the produce you’ve put so much time into. 

We’re talking this dish is perfect for any occasion whether it’s setting at home in front of the big screen watching football, at a summer cookout, tailgating, or just because. The cream cheese makes it oh-so creamy and honestly… forget the chips and give me a spoon and you better grab enough the first time because there won’t be any left when you go back for seconds! At least around here there wasn’t.

So I feel I’m beginning to ramble and there’s 1,000,001 things that need done before I have to go play softball for the next three days so I’m going to cut this short, but before I do I want to tell you about the awesome giveaway that we have going on this week! Ingredients
  1. 1/2 pound bacon, cooked and crumbled
  2. 1 tablespoon of reserved bacon grease
  3. 3 cups corn kernels (3-4 fresh ears cooked and cut off the cob using just the kernels not the milky scrappings OR frozen OR canned)
  4. 1/2 onion, diced
  5. 1/2 small bell pepper, diced (red or green)
  6. 2-4 jalapenos, seeded, diced (use according to your heat preference)
  7. 4 ounces cream cheese, softened
  8. 3 tablespoons milk
  9. To Taste salt
  10. To Taste pepper
Instructions
  1. In a large skillet, place the reserved bacon grease and add the onion, pepper, jalapenos, and corn stirring occasionally until tender (about 5 minutes)
  2. Add the cream cheese and milk, stirring constantly until melted
  3. If too thick add more milk, 1 tablespoon at a time
  4. Stir in bacon (can save some to garnish the dish with)
  5. Season with salt and pepper
  6. Serve with chips
Notes
  1. **When using fresh sweetcorn--cook as normal whether in hot water or microwave; whichever method you prefer. Then on a plate or sheet pan stand the cob up on the small end and with a sharp knife cut the kernels off (only about half way otherwise the corn will taste "cobby"). Save just the kernel portion for the dip.. utilize the scrappings (milky portion) for another dish such as corn fritters)**

I’m going to keep this very short and sweet. I’m exhausted from a weekend with the bestie getting stuff figured out for her baby shower… I’m so super excited for her and the hubs! 

Anyways… Father’s Day is around the corner and these Individual Cheesy Garlic Jalapeno Pull-Apart Breads are perfect for an appetizer or as a side for that steak you’re preparing! 

I didn’t grow up celebrating Father’s Day because my father was killed when I was just six months old. 🙁 But lets not get too personal right now. 

 These breads would be perfect for any occasion or an addition to a weekday meal… super quick, easy and cheesy!

Ingredients
  1. Baked Bolillios bread (or sourdough, but I like my bread a little on the softer side so it's not hard when baked)
  2. Butter, softened
  3. Garlic Salt
  4. Shredded Cheddar cheese
  5. Jalapenos, sliced
  6. Bacon bits
Instructions
  1. Slice your already baked bread, diagonally in one direction (be sure NOT to cut all the way through--I left about an inch of the bottom uncut)
  2. Slice diagonally in the other direction to form diamonds
  3. Mix butter and garlic salt together and with a knife rub the butter into the slits in the bread
  4. Sprinkle with a generous amount of cheese, making sure to get the cheese into the slits of the bread
  5. Place jalapeno slices into the slits of the bread and a few on the top.
  6. Sprinkle with a little more cheese
  7. Top with bacon bits
  8. Bake at 350* for about 10 minutes or until cheese melts and bread begins to crisp--do not over bake the bread or it will get super hard!
Notes
  1. **The amount of ingredients are per your decision. Increase or decrease any to fit your taste buds.**
  2. **I prepared two breads and used 3/4 to 1 cup cheese, 4 tablespoons butter, 1 tablespoon garlic salt, 1 large jalapeno, and 1/4 cup bacon bits**

So I must tell you… Basil is a new acquired taste of mine. Seriously though. Even when I was in culinary school, I was not a fan of it. I avoided pesto like the plague… okay maybe not that serious, but you get my point. It’s not the fact that I wouldn’t eat it at all… I would.. I just really disliked when basil overpowered the entire dish… hence pesto. 

Within the last few years I have been coming around to using more and more basil in my dishes and I’m beginning to really enjoy the flavors. Last year I planted a few basil plants in a big flower pot. Didn’t use as much as I wanted to since I was away at college and the plants were back on the farm. I ended up wintering my two serving plants in the house. Over the winter I ended up losing another one, but hey come spring I still had one left! I was even using fresh leaves all throughout the winter so I was happy about that!

Well… Last week since weather started getting really nice I wanted to take the basil outside to start harding it off… yeah it didn’t like that at all! My last plant died 🙁 after I kept it alive all winter. ugh. Sad sad! Luckily, I was able to harvest enough leaves to be able to do this awesome rub. 

Garlic just so happens to be one of my favorite smells… and flavors for that matter! This garlic and basil liquid rub is amazing and leaves the chops super juicy after grilling. Both garlic and basil are distinct flavors when you take a bite. I was so happy that they worked out together 😛 My mother will be happy… she’s a basil lover! 

When I made these chops I actually used boneless chops that I cut from a whole loin. Granted no matter if you’re using boneless or bone-in chops, this rub is fantastic. I whipped up the rub in my little food chopper. Threw everything in it and mixed it up.. no chopping necessary and if you use minced garlic… the chopper does all the work for you. The reason for the chopper allows the two liquids to emulsify easier :). So once that’s all done… marinade the chops for at least 30 minutes. Grill! 

Once they’re done you get these juicy, tender, and flavorful beauties.

Ingredients
  1. 4 pork chops
  2. 1 cup basil, firmly packed
  3. 2 garlic cloves, minced
  4. 2 tablespoons lemon juice
  5. 2 tablespoons oil
  6. 1 teaspoon salt
  7. 1/2 teaspoon pepper
Instructions
  1. In a small food processor, combine all ingredients and mix until liquid becomes emulsified and turns a whitish color.
  2. In a bowl or zip-lock bag, pour rub over pork chops and marinade for at least 30 minutes.
  3. On a grill heated to 350*F, grill the chops for 6-8 minutes on each side.
  4. Remove from grill and let rest for 5 minutes before cutting to allow the chops to rest.
  5. Serve!
Notes
  1. **You may also use these on a "George Foreman" grill instead of a gas or charcoal grill**

Macaroni Egg Salad is one of my all time favorite salads! My mother has been making it for years! We always have an over-abundance of eggs in the fridge so this salad is perfect for us. It’s also perfect for those left over Easter eggs you’re wondering what to do with. 

This salad is packed with flavor from eggs, bacon, green onions, horseradish, mustard, mayo and celery. I mean seriously, how much better could it get?! 

The only “labor intensive” part about this salad is cooking the bacon and pasta. Everything else is a breeze!

Usually when we make this at home, we leave out the eggs while we’re mixing it up and then just top our individual bowls with the eggs. You can keep it in the fridge longer if you do it that way, but if you’re taking it to a party or picnic very soon… go ahead and toss those babies in! 

Just trust me… take this to your next party or picnic and you’re family and friends will rave over it! It does have mayo in it so make sure it doesn’t stay at room temperature over four hours!

Ingredients
  1. 8 ounces shell macaroni (dry)
  2. 6 green onions
  3. 3 hard boiled eggs, diced
  4. 1/2 cup celery, diced
  5. 1/2 pound bacon, cooked, cut into pieces
  6. 1/2 cup dill pickle, diced
  7. 1 1/2 cups mayonnaise
  8. 1 tablespoon prepared horseradish
  9. 2 teaspoons mustard
  10. 1 tablespoon dill pickle juice
  11. To Taste salt
  12. To Taste pepper
  13. Optional-additional bacon and eggs
Instructions
  1. Cook pasta according to directions.
  2. In a medium bowl combine green onions, celery, pickle, mayo, horseradish, mustard, and pickle juice.
  3. Stir in cooked pasta.
  4. Add bacon and eggs.
  5. Season with salt and pepper.
  6. Refrigerate.
  7. Serve.
Notes
  1. **I like to make this salad a day in advance to allow the pasta to soak up the flavors. If too dry after setting a day add additional mayonnaise and adjust seasonings. Also, if allowing to set a day, wait until serving to add the eggs**

When the warmer starts showing itself, grilling is one thing that I highly enjoy. From hot dogs to brats and ribeyes, chicken to shrimp, you name it and I love grilling it. Can’t forget burgers too right?! 

For these Lemon Honey and Rosemary Grilled Chicken Skewers I have taken a couple chicken breasts, sliced them up into chunks and marinated them for a at least 30 minutes. Fresh lemon juice, a splash of honey (can you have a “splash” of honey even?) and fresh rosemary… delicious and flavorful! Not to mention it only takes a few minutes on each side and these babies are done! It takes my grill longer to get hot than it takes these babies too cook. 

So if you’re looking for something that’s packed with flavor and ready in no time… give these skewers a shot! Everyone here loved them… My nephew gave me a good laugh though.

“Lauren, these things are good whatever they are… even if they have grass on them.”

Ohh I had too laugh at him… he was referring to the rosemary as “grass”. Silly kid!

  1. 2 chicken breasts, trimmed, sliced into bite size pieces
  2. 1/4 cup honey
  3. Lemon juice from one lemon (2 tablespoons)
  4. Zest from lemon (1-2 tablespoons)
  5. 1 tablespoon oil
  6. 2 teaspoons rosemary, chopped
  7. 1 garlic clove, minced
  8. 1/2 teaspoon salt
  9. 1/4 teaspoon pepper
  10. 6-10 skewers, soaked in water if using wooden
Instructions
  1. In a medium bowl, combine all ingredients, but the chicken. Mix well.
  2. Add the chicken pieces and cover. Refrigerate at least 30 minutes.
  3. Preheat the grill to 350* and lightly brush the grates with olive oil.
  4. Remove the chicken from the refrigerator and skewer the chicken.
  5. Discard remaining juices.
  6. Place skewers on the grill and cook about 4 minutes on each side or until juices run clear.
  7. Serve!

I can’t believe I’ve been graduated from Northwest for 5 months already. It seems like yesterday I was setting in some sometimes boring… sometimes intense lectures just waiting until December 2013 so I could finally be done with school once again. Granted, I enjoyed my time at Northwest, being a Bearcat, but boy I was tired of school. Needless to say… my second run at college (for my Bachelors not my Associates) it was not nearly as fun as my first!! 

When I was at my JUCO (Junior College) it was like the time of my life! I don’t think I should go into details of how extremely fun and the craziness that occured during those two and a half years… yes two and a half… why… ohh well because I decided to slack off and not take all of my gen-eds.. therefore I had to take an extra term (so technically only 2.25 years because a term is only 3 months ha). I rarely ever missed a class though!! That’s a plus right? Culinary school was a blast! I miss it a lot and I miss the people I went to school with. Such a great time. 

My college graduations did not include a graduation party. That was only high school. Both times I graduated I was moving the next day…. to a different state in fact. After I graduated JUCO I moved to Denver the following day. Ohh how I also miss The Mile High! After I graduated last December it was time to move back to Iowa… actually I moved that same day; right after graduation! Psh… in a snow storm to top it off! Got to love winter in the Midwest! Snow, snow and more snow. All. The. Time! 🙂

Anyway… for my high school graduation, friends and family came over (I had it before the actual graduation) and we had lots of food. Around here, it was the typical… Two meats, sides, sandwiches and cake. Yup, lots of cake. Egg Salad was one of those on the list of sides. Some don’t like it, but hey it’s actually really good!! Throw it on a sandwich and add some lettuce, even tomatoes! Yumm-o! 

Even if you think Egg Salad can be a little out of the ordinary for a graduation party side, it’s really not! Grab some rolls or buns and toss on some egg salad to make  yourself Egg Salad Sammies… of course sammies refer to sandwiches! The nice thing with these are you can make them ahead of time and their perfectly sized for individual servings. 

So for that next graduation party you’re planning… don’t be afraid to add these Egg Salad Sammies to your menu. Trust me, there will be people who appreciate them as they’re a very popular favorite sandwich of many folks 🙂 

Ohh… this recipe only serves 4-6, but it will easily double, triple, quadruple or how many ever people you’re wanting to serve. 

PS. Don’t mind my horrible ability to cut a roll without smashing it 😛 it still tastes the same ha!

Egg Salad Sammies

Serves 5
A quick and easy Class Egg Salad on a roll for a sandwich (aka sammie) or use it as a simple side dish.

Ingredients
  1. 6 boiled eggs, peeled
  2. 2 tablespoons mayonnaise
  3. 1 teaspoon mustard
  4. 1 teaspoon relish (or simply use pickle juice--dill/kosher)
  5. To Taste salt
  6. To Taste pepper
  7. 1 green onion (tops), sliced no larger than 1/2"
  8. Rolls (I used KING'S Hawaiian Sweet Rolls)
Instructions
  1. In a bowl, quarter the boiled eggs and chop into 1/2" chunks.
  2. Add remaining ingredients, mixing well.
  3. Cut the rolls in half and add the egg salad mixture to the bottom of the roll.
  4. Cover with the lid (top of the roll).
  5. Serve!
  6. Additional options for toppings... leaf lettuce, sliced onion, sliced tomatoes
Notes
  1. **This recipe fits my family and friends taste buds... DO NOT BE AFRAID to alter this recipe by adding more or less of any of these ingredients**
  2. **Easily doubles, triples, ect.**

Venison Chili && a Blog Hop Chili Party + Giveaway

Happy Sunday everyone!

I’d like to welcome you to the 2nd Annual Super Bowl and Chili Party Blog Hop hosted by Tumbleweed Contessa. I have partnered with some lovely ladies to help you countdown to “The Big Game” with a few of our favorite game day ideas and not to mention we’re throwing a SUPER Slow Cookin’ Giveaway with great prices. Super Bowl & Chili Party

Given that we’re throwing a Chili Party, I just have to introduce you to my favorite! When it comes to cold weather, nothing warms my belly up better than a nice hot bowl of chili. There’s just something about it that hits the spot during cold weather. 

Venison Chili -- From Gate to Plate

Surely you have gathered by now that I live on a farm and majority of our food is produced right here on the farm, right? Well if not, now you do! 🙂 When I make chili, I use my own canned tomatoes and venison. Granted if you don’t have ground venison on hand, you can substitute beef…. no worries there. 

Canned Tomatoes for Venison Chili

To tell you the truth, until I made chili this last time (for the purpose of this post), I had never measured anything that goes into it. Granted my chili has never tasted exactly the same, the ingredients are all the same. One of the big differences in each pot I make is the tomatoes. Some are better than others and it just depends on which jug I grab. Regardless, chili is so simple to make and if you’ve never made it…. well then get into the kitchen and get to work! I’m a firm believer that chili should not be made by a recipe, which is probably why until today, I never wrote down what I put it in ha! 

My version includes 7 ingredients and literally takes 3 steps. Brown the meat and onion, add the seasonings, then the tomatoes and beans… So simple! Don’t you think?? Another question for you. Are you a chili with beans or a chili without beans type of person?? Well, again no worries! If you don’t like beans just leave them out. If you like a little spice add some cayenne or some jalapenos. Tweak it to your preferred liking!

Ingredients
  1. 1 1/2 pounds ground venison OR beef
  2. 1/3 cup onion, minced
  3. 1 tablespoon salt
  4. 1 1/2 teaspoon pepper
  5. 1 teaspoon garlic powder
  6. 1/2 gallon (8 cups) crushed tomatoes, plus juices
  7. 1 - 15.5 ounce can Chili beans
Instructions
  1. In a medium stock pot over medium heat, brown the venison and onion until brown.
  2. Add the seasonings, mixing well.
  3. Pour in the tomatoes and beans.
  4. Heat thoroughly.
  5. Serve.
Notes
  1. **See notes in the above text**
  2. **If you're using canned tomatoes, cut the salt back to 1 1/2 teaspoons**

Parmesan & Dill Snack Crackers -- From Gate to Plate #AppetizerWeek

Come game day, I love to munch throughout the entire game… I’m not one for the whole set down and eat all the food at one time. I’m a muncher. Chips and crackers are a great munchie and when you can make your own and flavor them any way you want… SCORE! I mean we’re talking saving dollars and scoring big ha! Everything is just better when you can make it yourself.

 I recently had bought a little 8 ounce container of snack crackers that were amazing. My first thought as “Oh my goodness, these would so freakin’ easy to make”… needless to say…… DUH I had to try and remake them! The ones that I bought were pretty salty, lots of dill and a hint of Parmesan cheese all tossed together. Delicious! Now, the ones I made have a little less salt, same amount of dill, and more Parmesan… granted they’re not identical, but they still taste great!

Granted there’s nothing better than some hot dip and chips, these snack crackers are sure to please and super easy to make! You can whip them up and have them setting on the coffee table in less than 5 minutes!

Parmesan & Garlic Boneless Chicken Wings -- From Gate to Plate #AppetizerWeek

I have seriously found my new favorite sauce… this Parmesan and Garlic Sauce I made for these Boneless Wings is outstanding. I’m a huge garlic fan though. Yes, forget the bad breathe afterwards because I’m still a fan. Oh, and during mushroom season… garlic is my savoir! I’m allergic to ticks (the only thing that I’m allergic to) and the garlic scent is released out my pores, therefore the ticks stay away! Hallelujah! 

So when it comes to wings are you a bone-in wing lover or a boneless wing lover?? I’m totally a boneless lover, but isn’t it funny that boneless wings really aren’t wings at all?! Okay, so maybe it’s not all that funny. It’s just super late.. .or well early in the morning–however you want to put it so I’m pretty rambly right now.

This sauce is so simple to make… and having a garlic press makes it a lot easier lol. I totally don’t have one and well I’m going to invest in one now that’s for sure!

I started out with getting the garlic cloves in the oven to get tender. Only took about 20 minutes. Then I got my naked wings made. They’re pretty simple too. Just take a couple boneless chicken breasts and slice them up into bite size pieces. Make a seasoned flour (salt and pepper) in one bowl and an egg and milk mixture in another. Dip each “wing” into the flour, then egg mixture, then flour again. Fry! How easy is that??

As your wings are frying, you can smash your garlic through the press or you have to do it the not so fun way like I did–smashing it with a knife. I mean there’s nothing wrong with the knife, it just doesn’t get smashed into fine little pieces like it would with the garlic press… Ohh well the flavor still stays the same!! Also, a little tidbit (that’s my word of the day lol)… the longer the sauce sets the better it becomes.. so you could always make it ahead of time.

But seriously… I am pretty sure that I will never have to go to B-Dub’s again… this is much better than their garlic sauce!! LOVE IT! Seriously. LOVE IT!

Parmesan & Garlic Boneless Chicken Wings

A wonderful marriage between Parmesan and garlic in a fantastic wing sauce

Ingredients
  1. 3 pounds, boneless chicken breasts
  2. 1-2 cups flour
  3. 1 teaspoon salt
  4. 1/2 teaspoon pepper
  5. 2 eggs
  6. 1/2 cup milk
  7. Oil
Parmesan & Garlic Sauce
  1. 8 cloves garlic, peeled
  2. 4 tablespoons olive oil, divided
  3. 1/2 cup mayonnaise
  4. 1 tablespoon corn syrup
  5. 2 tablespoons shredded Parmesan cheese
  6. 1 teaspoon lemon juice
  7. 1 tablespoon apple cider vinegar
  8. 1/4 teaspoon oregano
  9. 1/4 teaspoon thyme
  10. 1/4 teaspoon basil
  11. 1/2 teaspoon salt
  12. 1/4 teaspoon pepper
  13. 1/2 teaspoon red pepper flakes (optional)
Instructions
  1. Trim the chicken breasts of fat and veins.
  2. Cut chicken into 1-inch pieces.
  3. Heat oil in a deep fry to 350*F.
  4. In one medium bowl, place the flour, salt and pepper. Mix.
  5. In another medium bowl, combine the eggs and milk.
  6. Dip each chicken piece into the flour, then egg mixture, then flour again.
  7. Drop 10-12 (depending on the size of your fryer) into the hot grease.
  8. Cook for 3-4 minutes or until golden brown and cooked.
  9. Remove and repeat with remaining chicken wings.
For the sauce
  1. Place the garlic cloves and 2 tablespoons of olive oil on a cookie sheet.
  2. Bake at 350* for 20 minutes, flipping after 10 minutes.
  3. Remove from oven and let cool for 5 minutes.
  4. Press through a garlic press or using the side of a knife, smash.
  5. Combine garlic and all remaining sauce ingredients.
  6. Refrigerate for more flavor development or toss with wings.
Notes
  1. **Yields roughly 1 cup sauce----Enough for 3 pounds of boneless wings**
  2. **For the spices, I used dry**
