Light and fluffy lemon cookie with a fresh blueberry filling makes these Lemon Blueberry Sandwich Cookies perfect for a summer treat!

Can you believe that there was a period of time in my life that I wouldn’t touch a blueberry… the reason?! I have none. Do you have a food that you are the same way about?! Get over that phobea! There’s no reason to have it… seriously… I should’ve adored blueberries much before now!
Lemon and blueberries just automatically go together anyway don’t they?? Yeah, that’s what I thought. Usually I don’t do the whole boxed mixes… I like to make things from scratch, but I just had to try Jen’s version of lemon cookies. They’re super easy and delicious just eating them by themselves. We may have ate one.. or two.. before we got the filling done 😛
Now as far as this blueberry filling goes… excellent and I’m in love with the color. Blueberries make such a beautiful color. I started with cooking these berries down in a little water. Once the berry mixture cooled I whipped in some sifted powdered sugar… enough to make it spreadable… but not runny because hello.. who wants their filling to run out of the cookie?! Yeah, no one I’m guessing.
Once the filling is finished… slap two cookies together with the filling in the middle… now let your taste buds and belly enjoy some awesomeness. Just saying!
- 1 box lemon cake mix
- 1/2 cup shortening
- 2 eggs
- 2 tablespoons water
- 1/2 cup blueberries
- 1-2 cups powdered sugar
- Preheat oven to 350*F
- Mix all ingredients until well combined.
- With a spoon or cookie scoop, for teaspoon sized cookie balls
- Place on a cookie sheet and bake at 350* for 9-10 minutes.
- Remove to a wire rack and let cool completely before placing filling in the middle.
- In a small saucepan over medium-low heat, combine the water and blueberries.
- Stirring frequently cook the berries down until they're soft.
- Remove from heat and cool completely.
- Once cool, with a mixer gradually add powdered sugar until you have reached a spreadable consistency that's not going to run out of your cookie.
- Place the frosting on one side of the cookie and cover with the second cookie.
- **Store in an airtight container either at room temperature or in the refrigerator**
- **Yields 18 sandwiches**
