Creamy. Dilly. Pickly. Healthy. Dill Pickle Hummus.
Pickles… who doesn’t love pickles right?! I mean okay… some people don’t, but they’re just weird! This month was a real challenge for me to come up with a new recipe using pickles…. Awhile ago I posted these Fried Pickles, which by the way are absolutely amazing… so I had to go a step further with my creation for this #FoodieExtravaganza event. Have you been to our foodie party before?! Well if not… here’s the low-down.
Foodie Extravaganza is where we celebrate obscure food holidays while we cook and bake together with the same ingredient or theme each month. This month – Camilla is hosting – she invited bloggers to come up with recipes using pickles or something pickled since National Pickle Day is November 14th.
So now that you know about FE, let me get back to this… I had been craving Hummus for a long while and then… that’s when I decided I was going to do something on the different side; it might seem more like a pregnancy craving than anything… PS I’m not expecting! I just crave weird things for no reason.
Toss some chickpeas and pickles together and boom… A delicious healthy snack is ready to go! I mean it really is that easy!

ATTENTION: Currently my recipe app isn’t working. Given that, I have listed the process as follows:
15 ounces chickpeas, drained
5 baby pickles (1 cup chopped pickles roughly)
1 tablespoon garlic, minced
6 tablespoons pickle juice
2 tablespoons olive oil
1/4 teaspoon dill
To Taste salt
To Taste pepper
In a blender or food processor, combine all ingredients until smooth. Add more liquid if too dry.
Serve with vegetables and or chips and crackers.
**Yields 2 cups**
**You don’t have to use baby pickles, you can use large ones as well… only about 2 large pickles**
