Here we are… another month of Foodie Extravaganza and I’m the host for our party. Can you believe it’s already October? I sure can’t, but October is a special month and not only because of Halloween, fall arriving and football, but because it’s National Pork Month. This is a month that we can really show appreciation to the Pork Producers because without them…. we’d have no bacon and that’d be a horrible sin. 😉 Don’t you think??
I had planned for a nice post about pigs and Pork Month, but I’m still in the middle of moving and haven’t had time to set down and really write… or type I should say ha! So I’ll leave you with the link to the Pork Checkoff.
Growing up on a farm you appreciate all the aspects of agriculture. I could never convince my mother to let me get show pigs so I wasn’t around them much growing up, but I live in Iowa though… the largest pork producing state in the US so it’s not like I’ve never been around confinements or even “dirt” pigs! Iowa ranks #1 in a lot of things believe it or not… everyone thinks it’s just one of those fly over states, but to us who live here, it’s a lot more than that especially when we rank high in the agriculture world. She has some awesome recipes and talks a lot about her family and cute little piggies 🙂 and if you haven’t been to her blog before… she’s from Iowa too!
Bacon… you’d think with as much as I love bacon.. I would have went with that as the main focus, but believe it or not it really didn’t even cross my mind. I had this whole pork loin staring me in the face so I decided pulled pork it was!! I’m a big fan of pulled pork and an equal fan of mac and cheese.. which if you caught my post on Panera Copycat Mac and Cheese you’d know that 🙂
The Mr and I went a restaurant near us and we had a beef and mac and cheese flatbread which inspired me to come up with this for National Pork Month. This recipe that I’m sharing for Foodie Extravaganza is really quick and easy. I had leftover pulled pork and mac and cheese so I whipped up this flatbread recipe by Mel’s Kitchen Cafe. It’s super easy and delicious! If you don’t have any leftover pork or mac and cheese in the fridge, whip up your favorite recipes or both and then just put them on the flatbread. Like I said… super easy!
- Pulled Pork
- Mac and Cheese
- BBQ Sauce
- Shredded Cheddar Cheese
- Preheat oven to 350*F
- Take one flatbread and spread with BBQ Sauce, then mac and cheese, pulled pork, drizzle with BBQ sauce and sprinkle with cheese.
- Bake until cheese is melted.
