A sweet, but tart Rhubarb Ice Cream is perfect for any summer day!
Believe it or not, ice cream is something that I’ve actually never made. I mean I own an ice cream maker, but I’ve never actually taken the time to make it. It’s so crazy because it’s easy!!
For this Rhubarb Ice Cream I did not use my maker, I simply tossed it in the freezer and… boom. Delicious ice cream! Can’t beat that right? We’re talking only 5 ingredients as well! As you might notice, I’m still on this rhubarb kick, even after last month when I made the delicious Lemon Rhubarb Bundt Cake. You know…. I might even make the cake again and top it off with this ice cream!
- 1 pound fresh rhubarb, 1/2 inch slices
- 2 1/2 cups sugar
- 2 teaspoons lemon juice
- 1 tablespoon water
- 1 1/2 cups heavy whipping cream
- In a heavy bottom saucepan over medium heat, combine the rhubarb, sugar, lemon juice and water.
- Cook until rhubarb is tender.
- Place in a blender and blend until smooth OR use a fine potato masher and mash (that's what I use) and place in the refrigerator to cool.
- In a mixing bowl, whip heavy cream until stiff peaks.
- Fold in rhubarb mixer and pour into wax paper lined 6x4 loaf pan, stirring every 15 minutes for an hour. Allow to chill 8 hours or overnight.
