Quick and easy. Tender and juicy. These Cherry Chipotle Meatballs are a crowd pleaser!
Welcome to Day #3 of #10DaysofTailgate! If you’re just joining us let me tell you few things. We have nearly two dozen bloggers with over one hundred recipes scheduled to inspire you through an entire tailgating season. Think chicken wings, skewers, sweet nibbles, and cocktails. The event runs September 20th through September 30th. Just remember: your fork does not go into your monitor…no matter how much you might want to taste some of these dishes. Okay? Usually meatballs are made with ketchup and BBQ sauce right?! Well not these. They’re made with NOT KETCHUP — Cherry Chipotle Sauce. Incredible taste and it can go on anything you’d put ketchup on!
For these meatballs, I’ve tossed a few tablespoons into the meat while I was mixing and once they’re baked you can toss them in the sauce for a little more 🙂 I like them both ways, but the saucier the better! These bite-sized appetizers are easy to make and only take about 20 minutes in the oven. After they come out just toss them in the crock pot if you’re going to be heading to the stadium to tailgate or even if you’re partying at home to keep them warm. Don’t have crock pot accessibility at the field? Don’t worry… just put them in a pan and heat them up on the grill. When we tailgate, we don’t mess with a lot of pots.. we just toss everything on the grill to warm up!
I like these because they’re completely different from other meatballs I’ve tried. The Cherry Chipotle sauce gives them a different flavor that you just keep coming back for more and your guests are probably going to ask what makes them so different—in a good way of course!
So when you’re planning your next tailgate or simply just an in-home football party. Give these juicy bad boys a try!
- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup Parmesan cheese
- 1/2 small onion, chopped
- 3 tablespoons NOT KETCHUP Cherry Chipotle Sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 egg
- Preheat oven to 350*F
- In a bowl combine all ingredients, mixing well. DO NOT over mix otherwise your meatballs will become tough.
- On a parchment lined baking sheet, use a spoon or small cookie scoop to form tablespoon balls. Roll them and place them on the baking sheet.
- Bake at 350*F for 20 minutes
- Remove from baking sheet, toss with additional NOT KETCHUP Cherry Chipotle Sauce (optional--can serve it on the side) and place in a crock pot to keep warm
- **Yields 2 dozen bite-sized pleasers**
- **When forming the balls, wet hands to avoid the meatball from cracking while baking**
