Soft. Chewy. Sweet. Salty. Deliciousness. Peanut Butter Chocolate Chip Oatmeal Bacon Cookies. Yes, bacon! The heaven’s are singing right now!
Am I allowed to call these healthy? Peanut Butter is good for you. Chocolate… well we all know chocolate comes from a plant so it must be healthy for you too right?! Oatmeal… definitely healthy for you. Now, bacon… when I look at “My Pyramid”, bacon falls under the category that requires the most servings haha! So by my calculations these cookies have to be good for you!
Have I convinced you yet that these are healthy?!
Well, either way. You don’t want to miss out and you want to hide the entire batch from the cookie monster or maybe that’s just my softball team that devoured them all after I took them to one of our games. I needed opinions so I guess that’s okay, right? Dirty ‘Lil Ninja cookie thieves! Dirty ‘Lil Ninjas was the name of one of my softball teams 🙂
#BaconMonth gave me the perfect excuse to start whipping out some desserts that included bacon. Yay!!
I was pretty excited when I started making these. Everything I love all wrapped up into one cookie. It can’t get much better than that right? I must admit I was a little worried about too many flavors, but honestly it all works out! You can taste the peanut butter, chocolate chips, oatmeal, and bacon… sometimes the bacon gets a little hid depending on the cookie, but the saltiness is still there to help with the sweetness. I just love the sweet and salty combo! One of my favorites. Do you have a favorite combo?
Not only do these cookies make your taste buds scream with joy and want more, but they’re super easy to make. Frying the bacon is the most difficult task and if you chop up the bacon when it’s frozen and fry it.. or even bake it in the oven… it’s a breeze!
Just promise me this… even if you don’t agree with me when I’m trying oh-so-hard to convince you that these cookies are healthy and totally perfect for breakfast 😉 that you’ll at least share them with your family so you don’t over indulge on the awesomeness all by yourself!
- 1 cup butter, softened
- 1 cup peanut butter (I use smooth)
- 1 cup white sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups oatmeal
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 cup mini chocolate chips
- 1 1/2 cups bacon, cooked, crumbled
- Preheat oven to 350*F
- In a large mixing bowl, combine the butter and peanut butter until thoroughly combined.
- Add the sugars and mix well.
- Add the eggs, one at a time, mixing after each addition.
- Mix in the vanilla.
- In a sifter combine the flour, soda, powder, and salt.
- Sift the dry ingredients into the butter mixture in two drafts, mixing after each addition.
- Mix in the oatmeal.
- With a spoon fold in the chocolate chips and bacon.
- Drop the cookie dough by the teaspoons onto ungreased cookie sheets.
- Bake at 350* for 9-10 minutes.
- Cool 1-2 minutes before removing to a cooling rack.
- Store in an airtight container either at room temperature or in the refrigerator.
- **Yields 5 dozen cookies using a cookie scoop**
