Lemon Brookies -- From Gate to Plate #KickOffToSummerWeek2014

Can you believe until a few months ago I had no idea what a “brookie” was… When I seen a few recipes floating around on Pinterest… I was all sorts of confused. When I hear “brookie” I’m thinking.. “Yo, are you meaning a brooskie, cuz I’m down for one of those :P”. Give me a brooskie, bro! Just kidding. Or am I? Yeah, I don’t know either.

Anyways… A Brookie. A Brownie. A Cookie. What a wonderful combination! These Lemon Brookies have a sugar cookie bottom and a lemon brownie top. Delicious. I mean the cookie is so tender and the lemon is not your “normal” brownie, but more on the edge of a baked custard type… I’m still going with a Brookies though! Don’t judge and don’t argue! :) 

Are you wondering how this relates to Memorial Day?! Psh, well when it’s 100* outside and you need something light and refreshing, lemon is usually going to do the trick for you. Right? This bar is packed with lemon and packs a serious citrus punch. If you’re a lemon lover you will love this! Serve it up at your next potluck, party, or picnic. You won’t have to worry about taking any home with you. The filling really tastes like lemonade too and no I’m not crazy!

Ingredients
  1. Sugar Cookie Bar
  2. 1/2 cup butter, softened
  3. 3/4 cup sugar
  4. 1 egg
  5. 1 egg yolk
  6. 2 teaspoons vanilla
  7. 1 1/2 cups all-purpose flour
  8. 1/4 teaspoon salt
  9. 1 teaspoon baking powder
  10. 1/2 teaspoon baking soda
  11. 1 1/2 teaspoon cornstarch
  12. Lemon Brownie
  13. 1/2 cup butter, softened
  14. 2/3 cup sugar
  15. 1/4 teaspoon salt
  16. 3/4 cup flour
  17. 2 eggs
  18. 1 teaspoon vanilla
  19. 1 lemon juice + zest
Instructions
  1. Preheat oven to 350*F and line a 8x8 or 9x9 square baking dish with aluminum foil, grease.
  2. Sugar Cookie
  3. Cream together to butter and sugar until smooth.
  4. Add the egg and yolk.
  5. Add the vanilla.
  6. Sift in dry ingredients and mix until thoroughly combined.
  7. Press cookie dough into the bottom of the prepared baking dish.
  8. Bake at 350*F for 25-30 minutes or until edges begin to brown.
  9. Remove from oven and prepare brownie.
  10. Lemon Brownie
  11. Cream together the butter and sugar.
  12. Sift the dry ingredients into the butter mixture and mix until light and fluffy.
  13. In a small bowl combine the eggs, vanilla, lemon juice and zest.
  14. Add the liquid to the butter mixture and mix until smooth.
  15. Carefully spread the brownie batter onto the cookie crust (crust will still be slightly giggly).
  16. Bake at 350*F for 20-30 minutes or until set (I bake until it starts to slightly bubble)
  17. Remove from oven and cool on a cooling rack.
  18. Cut into bars when completely cooled.
  19. Serve.
  20. Optional**Dust with powdered sugar
Notes
  1. **Yields 12 bars depending on how big/small you cut them**
