A Memorial Day party just isn’t a party without a delicious pasta salad like this Macaroni Egg Salad!

Macaroni Egg Salad is one of my all time favorite salads! My mother has been making it for years! We always have an over-abundance of eggs in the fridge so this salad is perfect for us. It’s also perfect for those left over Easter eggs you’re wondering what to do with.
This salad is packed with flavor from eggs, bacon, green onions, horseradish, mustard, mayo and celery. I mean seriously, how much better could it get?!
The only “labor intensive” part about this salad is cooking the bacon and pasta. Everything else is a breeze!
Usually when we make this at home, we leave out the eggs while we’re mixing it up and then just top our individual bowls with the eggs. You can keep it in the fridge longer if you do it that way, but if you’re taking it to a party or picnic very soon… go ahead and toss those babies in!
Just trust me… take this to your next party or picnic and you’re family and friends will rave over it! It does have mayo in it so make sure it doesn’t stay at room temperature over four hours!
- 8 ounces shell macaroni (dry)
- 6 green onions
- 3 hard boiled eggs, diced
- 1/2 cup celery, diced
- 1/2 pound bacon, cooked, cut into pieces
- 1/2 cup dill pickle, diced
- 1 1/2 cups mayonnaise
- 1 tablespoon prepared horseradish
- 2 teaspoons mustard
- 1 tablespoon dill pickle juice
- To Taste salt
- To Taste pepper
- Optional-additional bacon and eggs
- Cook pasta according to directions.
- In a medium bowl combine green onions, celery, pickle, mayo, horseradish, mustard, and pickle juice.
- Stir in cooked pasta.
- Add bacon and eggs.
- Season with salt and pepper.
- **I like to make this salad a day in advance to allow the pasta to soak up the flavors. If too dry after setting a day add additional mayonnaise and adjust seasonings. Also, if allowing to set a day, wait until serving to add the eggs**
